10 Min Tuna + White Bean Salad
This is a super simple dish to throw together in a pinch. Great for lunch, dinner, or even a mid arvo snack (arvo = afternoon for my non-Aussie mates!)… most of these ingredients are pantry staples; this is also a great way to use up any fresh herbs on hand.
1 frozen packet pitaya (like Pitaya Plus)
1 1/2 cups frozen strawberries
3/4 cup frozen mango
3/4 cup frozen pineapple
2 Tbsp chia seeds
1 cup spinach
1 1/2 cup orange juice
1/2 cup unsweetened almond milk (or water)
Place all ingredients in a blender and puree until smooth, adding more milk or orange juice as needed. Divide into 2 large smoothies or 4 small smoothies.
